Yes, oleic. Oleic fatty acid, also called omega-9, is a monounsaturated fat that is very resistant to heat and one of the pillars of the Mediterranean diet.
To qualify as “oleic”, sunflower oil must contain a minimum of 75% monounsaturated fat. Conventional sunflower oils contain barely 25%.
