Culinary tips

Cinnamon is delicious in a large number of traditional desserts:

  • Apple pies and crisps.
  • Fruit compotes.
  • In brioches, muffins, cookies, donuts, pancakes, gingerbread, etc.
  • To flavor tea, herbal tea, cider and mulled wine and all alcoholic drinks served hot (grog).
  • In rice pudding and other desserts.
  • In pumpkin pie.

We know it less in savory recipes, but cinnamon is a wonderful addition to many dishes:

  • It is one of the most important spices in North African (especially Moroccan) cuisine: it is found in the famous chicken pastilla, in tagines, soups, and meat dishes.
  • In Indian curries and legume stews (dhal)
  • In spice blends for meatballs.
  • In marinades for chicken, veal, lamb skewers, etc.
  • Cinnamon is an integral part of all spice blends: curry, ras-el-hanout, allspice, garam-masala, etc.

Cinnamon is a very fragrant spice that is actually the inner bark of a small tree native to Sri Lanka, but is now harvested almost everywhere. There is another type of cinnamon with a slightly more pungent and sweet taste that comes from China. It is a very powerful aromatic oil contained in the bark which gives cinnamon its exotic smell and its sweet, warm and recognizable flavor.

In Quebec (as in most Western countries), cinnamon is mainly used to spice up cakes, desserts and drinks, especially those made with apple and chocolate. However, you can also enhance a large number of savory recipes, as in many oriental and Middle Eastern dishes.
