Dune peppercorns (crisp alder) smoked with cherry wood.

This dune pepper is hand-picked in the Nord-du-Québec region of Quebec, Canada, and is smoked in Lanaudière.

21 g container

It can be used anywhere you want to infuse flavors of smoke, pepper and resin: in a sauce or chili, on your grilled or roasted meats and vegetables, or in a homemade spice blend. Add the whole kittens to your simmered dishes and remove them when serving to preserve all their aromas without bitterness. You can also grate it with a microplane or grind it in a mortar, but avoid putting it in a pepper mill, as its resin could damage the mechanism. The grinding and grating methods tend to release more bitterness than the former. Adding it at the start of cooking will also provide more bitterness than adding it towards the end of cooking.

In order to preserve its aromas and flavors, we recommend storing smoked dune pepper away from light and humidity. As it is a dried and whole spice, smoked dune pepper can be stored for a long time. However, we recommend consuming it within 12 months of purchase to enjoy its best flavors and smoky aroma.

Smoked with cherry wood, this dune pepper combines its resinous, minty and fruity appearance with smoky and woody aromas. It will enrich and complexify the flavors of all your dishes.

 

Even though its shape is reminiscent of long pepper and its aromas are similar to those of black pepper, it is not a pepper in the botanical sense. It is the catkin (spike-shaped male flower) of a shrub, which is picked by hand in autumn and winter. It can be eaten fresh or dried (as is the case here).
